Apex Hotels wanted to rennovate and revitalise the restaurant and cocktail bar attached to their City of London hotel as a stand alone destination.

Inspired by a passion for British cuisine and it’s eclectic nature, and the history of the local area, notably the famous author Samuel Pepys, the concept of ‘curiosity and combinations’ was developed to shape the new brand.

The name of the restaurant is taken from a dish greatly admired by Pepys and mentioned in his diary, ‘the Lampery pye’, and the supporting illustrations allude to the combination of best-of-British ingredients, with a nod to Pepy’s wry humour.
